Pig's head...a delicacy for many.
SANTO DOMINGO. – Dominican Republic’s Agriculture Ministry and pork producers will adopt the joint measures needed to declare the country free of Classic Swine Fever so that meat can be exported, especially to the United States.
Agriculture minister Salvador Jiménez met with the leading pork producers to deal with the situation of the sub-sector, which raises an average of more than 800,000 pigs yearly, and creates thousands of direct and indirect jobs.
In the meeting producers from Santiago, Moca and La Vega asked the Government to designate a commission to provide follow up on pork production, especially the measures needed to have healthy pig farms, Agriculture said in a statement.

God, I would be leary about buying food from a street vendors in the DR, Have you seen how they display a whole roasted hog for sale during the christmas holidays?. They stand it, uncovered on the a wood skewer right on the side-walk curb while cars with their fumes and pedestrian pass by. Man who knows what industrial particles fell on the flesh and then it is injested by humans at home during one of the most symbolically innocuous times of the year.

God, I would be leary about buying food from a street vendor in the DR, never mind and forget pork. It is not a clean meat in the first place, one strike against you from the start. You have no idea how it was handled before you got it. Anyway, those street guys don't refrigerate anything, (how can they). Besides, I have been living way too long in the US and my digestive track has gotten use to sterile conditions. I lost the immunity and no longer have the ability to kill bacteria like I once did. I use to be able to eat all that stuff, but today, forgettaboutit !!!! Man I remember last year, I was so hungry when I saw some guy selling a delicious looking pork by product, tripe soup, displayed in such a manner that it tempted my senses, that I easily broke down while on an empty stomach. I had temporary insanity. The vendor had set up in what appeared to be a visually sanitary environment. I bought and eat it, but spent 1 week in bed, nearly died suffering from Caonabo's revenge.

If the FDA permits the importation of Dominican Serrano{Jamon Serrano} style hams to the USA then they have a shot .....they are of high quality at a very fair price......but the rest of the pork products are going to be over priced

The pork producers have a big task ahead of them to bring about the changes needed to make their product available to the US market. If they think that declaring the country free of swine fever they will meet the criteria, not so. The US requires the imported product to meet international and US domestic production and sanitary standards. Dominican pork producers who desire to enter into the US market will have to make capital improvements to its production infrastructure to meet these standards. This undertaking would be rare and costly because the financial risk taken by them and/or their investors would be contingent on meeting the standards. There is no guarantee they will achieve this. They may eventually meet the standards but in this world economy guided by politics and the forces of world tensions they may be excluded from the market because the president is wearing the wrong hat of the day.

I always buy road side roasted pork and chicharrones in DR and have never had any digestive issues with it. Xwill have you ever tried the roasted pigs near Loma Quemada on your way up to Sajoma by this older blue eyed guy??? This guy makes some serious pig!!!
