desia, what you just posted is a handbook for restaurant startups. the part i like most is the one where you suggest a short menu. i go to restaurants here, and they bring me a menu that looks like Mein Kampf. why do they have to serve 189 different offerings? a guy who can replicate Kentucky Fried Chicken in a place like Puerto Plata or San Francisco, or any decent sized metropolis, will make a killing. add to that a great ahmburger, and the rest is just sides. you might fail, but you stand a far better chance than the guy who needs 8 different freezers.

Brodel, an uncle of mine relocated to the DR, opened a restaurant with a manu "longer" than the Bible and his restaurant went "belly up" in less than 1 year........

A cousin started a restaurant with muuuuuuuuuuuuch less money and just a few dishes and 7 years later, his restaurant is doing pretty well.........opened 6 more, all over the DR......same small menu.

Does all of the romo stock finish when you after you walk out of that place?

Small is the name of the game, too too many headaches with big places and not fun when you are in them either, just headaches. One has to have a fun place and a living room atmosphere at my age, finger licking good chicken and ribs and then some cool sandwiches and a few things you cannot get at home or just too much trouble to prepare if you living single or just a couple and want to go out. Right? IF you are going to live local serve local with a flare and make new friends.

desia, you are on the money. finger licking chicken and ribs would do GREAT. trust me on that one. everyone here does chicken, but only a very few have a clue to doing it.
