I find Puerto Rican food to place such heavy influence on Frituras to the point where they eat it along side their entree dinner. The use of Frituras in Dominican food seems more eaten as street food in comparison. Arturo I was wondering if u were a cook at an establishment and if so where at? I was also wondering if u have allowed cuban and puerto Rican elements to shape your predominant Dominican cooking? I haven't found Puerto Rican buisness that add goat to their menu in comparison to Dominican restaurants. Can u explain that? Thank you Manito and God bless. I have a personal theory that Cubans, Puerto Ricans and Dominicans are all the same race. As such, and because our cuisines have the same influences, the differences between Cuban, Puerto Rican and Dominican food (And even Venezuelan and Colombian to a certain extent) are not more than say "comida Cibaeña" (North of the Dominican Republic) and "sureña" (South of the DR) which are both, of course, Dominican (But very characteristic) I embrace Hispanic Caribbean cuisine as a whole and continuously search for new recipes to try. I have been cooking for more than 20 years. I have cooked for large groups (more than 300 in more than one occasion) but generally cook just for family and friends, as my main career is that of professional interpreter and attorney at law. My main influences are Puerto Rican and Dominican. I know well Puertorican cuisine as I have some Puertorican blood and half of my mother's family is Puertorican (and lives in Puerto Rico) I visit Puerto Rico frequently and was there last year. I am Dominican and live in Santo Domingo, so of course I am more Dominican than anything else. elfogoncito.net (my food blog) which is also available in English (elfogoncitoinenglish.wordpress.com) portraits mostly Dominican Traditional food.
