SANTO DOMINGO.- While Public Health minister Bautista Rojas on Monday announced further studies on the quality of salami and affirmed that producers have reliable records, hog farmers warn of further scandal which sausage-makers will "regret it for a long time" once the research finds the massive use of the chicken scraps know as MDM, mechanically deboned meat.

In a statement, Rojas said the studies will be conducted this week, and questioned the information disclosed by the Consumer Protection Agency (Pro Customer) "because it’s date in January and doesn’t establish the exact quality of the product."

Lamentation

Jose Alba, president of the powerful Cibao region pork farmers grouped in APORCI yesterday predicted a paralysis in the sale of salami once information surfaces on how it’s being made and in his view that sector will "regret it for a long time."

Alba admitted the use of poultry scraps (MDM) in the preparation of salami for more than 15 years, but justified it by noting that those products are sold at lower prices.

Again he lied, they don't use scraps, instead he really meant crap. It is a very simple gramatical rule, all he has to do is drop the S in order to get the true meaning of he word. And they said Dominicans cut he S off all of their words.

I have always been very surprised at the very high rate of kidney infections here in the DR , nearly all of which are introduced by the E,coli bacteria ,,I had assumed it was people drinking unsafe water which can carry the E,Coli bacteria .
However I now read that much salami here also contains the E.Coli bacteria ,maybe from the faeces content in the salami and as Dominicans are big salami eaters , I wonder if the deaths from kidney infections is a direct result of this bad food

thank you for making me laugh guys. And also for bringing to light the issue of the kidney infections. there may be a link Ricardolito, very interesting indeed. They should be looking into that. I have a friend who gets terrible kidney pain. The bacteria may be the culprit.

Sausage is amongst the oldest food traditions in all cultures as our forbearers wasted nothing in order to ensure food on the table. This incident of lifting the carpet and finding bad processing cleanliness is NOT new nor exclusive to The Dominican. Here in Canada, the largest producer of processed meats actually had to shut down an entire plant because of tainted meat products. It's all about the meat inspectors doing their job with clout. This is the nexus. If the ruling body is going to do anything to guarantee safe foods for the general public, it must have a platoon of inspectors and give them teeth. And then the Government must have sharp teeth for their inspectors to make sure there are no shenanigans.

Meanwhile, make sure that you store and cook all meat very well.

My heart goes out to the street vendors and restauranteurs who are not only at risk of health, but of livelihood too.

Tourists must also use caution. This is unknown outside of the Dominican.

I rarely eat processed foods! I and Haitian, and I don't know if that is because my dad is a doctor or what! But to my knowledge most Haitians rarely eat cold cuts to begin with. Mm dad always frowned upon canned products! Later on I found out why, do you know that the US FDA allows 3% of rodent in all processed foods? So don't worry all countries have their issues. If I can't recognize it, I don't eat it, not to mention most processed foods are dramatically high in sodium and preservatives.check YouTube.
